In honor of Knit 1 Tea 2 swap I decided to post a Tea Party recipe.
Citrus Tea Cake.
11/2 cups all-purpose flour
2t baking powder
1/2t salt
1c sugar
3 large eggs
1T orange zest
2t lemon zest
1/4 cup milk
3/4 cup extra virgin live oil
1. preheat oven to 350*.Grease and flour 8 inch cake pan.
2. In a medium bowl, sift together flour, baking powder, and salt. In a separate bowl, beat together sugar, eggs, orange and lemon zests, and milk. Gradually beat in olve oil.
3 Stir in flour mixture, being careful not to over blend. Pour batter into prepared pan and place on baking sheet. Bake in center of oven for 35 minutes, or until skewer comes out clean. Cool on rack for 15 minutes, then transfer to plate. serve with berries, whipped cream or cream anglaise.
This sounds nice! I love the fact that it has olive oil instead of butter or some other solid fat. I shall try it at the weekend.
